The other secret to this Italian quinoa soup? Cream of course! (<- jk we're not using dairy, remember?) So instead of the actual cream, I whipped up a cashew cream in my blender and stirred that into the soup. All you need are cashews, nutritional yeast, miso paste (for that nice umami flavor), some water and a scoop of the soup base. Heat olive oil in a large stockpot or Dutch oven over medium heat.

Instructions to make Quinoa soup:
  1. Heat oil with cumin
  2. Add onion and fry until softened
  3. Add garlic and fry with onions
  4. Add carrot and potatoes, coat with oil
  5. Add quinoa, stir
  6. Add stock
  7. Bring to boil then simmer for 23min

All you need are cashews, nutritional yeast, miso paste (for that nice umami flavor), some water and a scoop of the soup base. Heat olive oil in a large stockpot or Dutch oven over medium heat. Add garlic, onion, carrots and celery. In a large stock, heat the oil over medium heat. Add the chicken stock and quinoa and bring it to a boil.
