Wash the coriander leaves and chop them roughly. This is for making the vegetable stock. Boiling the lemon zest will not taste bitter. - Heat 1 teaspoon olive oil in a wok and sauté ginger, garlic and green chilies for 30 seconds.
- Now add finely chopped onion, carrot and cabbage alongwith a tsp of salt. Mix and cover with lid for 2 minutes at low flame for faster cooking.
- After two minutes, add basil herbs and black pepper powder. Increase the quantity of black pepper powder as per your taste.
- Add coriander leaves and cook for a minute.
- Now finally add Lemon Juice to it. Mix.
- Now add 2 big glasses of water and bring it to boil.
- Now turn the flame to low and add cornflour slurry (Cornflour mixed in water). This is optional if you desire thick consistency of soup.
- Bring 1 more boil and soup is ready ! Serve hot !
