Cook the rice following pack instructions, then drain, spread it out to steam-dry and set aside. Stir fried rice is best when it is made with cold rice. You can even cook the rice the night before. The longer the rice sits the better it tastes!

Instructions to make Fried Rice:
  1. Wash your vegetables, then dice and set aside
  2. Seive the meat stock into your cooking pot, then add the three and half litres of water, then allow to boil. At this point add the cooking butter and allow to melt inside the boiling water. Note the cooking butter will help the grains of the rice to stand apart when is cooked.
  3. Next, wash the rice with salt and water like three times to wash off the starch completely, then add to the boiling water. Note: skip parboiling to get best result with fried rice.
  4. Next add the curry, 3 stock cube, 2 tablespoons of stock powder and fried rice spice, then taste and adjust the taste with salt if necessary, cover to cook till dry. The water should be able to cook the rice so you don't need to top up water. It's best to measure your water when cooking fried rice or jollof rice so you don't keep topping up water, it washes down the taste if the rice.
  5. Lastly, add the already cooked rice and combine together by stirring continuously for about five minutes, then bring down and serve. Note: fry your vegetables on low heat, and do not cover at any point while frying so as to retain it's fresh color.
  6. At this point, get a big frying pan, then add the vegetable oil, heat for few minutes then add the diced spring onion and saute, next add the carrot, green chillu and runner beans, fry for few minutes then add the green bell and sweet corn, season with two stock cube and a tablespoon of kitchen glory stock powder, then fry for few more minutes.
