Add the wine to the chicken and bring it to the boil. Add the cream, season again, add the mushrooms, the stock, the onions and one bunch of tarragon. Place in the oven for forty- five minutes. Heat the oil in a heavy-based pan over a medium to high heat and fry the chicken, skin side down, until it becomes crispy.

  1. Pre heat oven to 160c.
  2. In a pre heated pan add half the butter and brown the chicken for a couple minutes each side. Remove the chicken add this to a casserole dish but leave the sauce for cooking the onions etc in.

  5. Cover the dish with tinfoil and place in the oven for 40 minutes.
  6. After 40 Minutes remove the dish from the oven. Stir in the Creme Fraiche, Dijon mustard and Corn flower. Return to the oven for 15 minutes uncovered.
  7. Garnish with Tarragon and serve with creamy mash, Rice or fresh Garlic bread👌
