  10. Take 1 tsp sesame oil
  11. Get 1 tsp chicken cube or chicken powder seasoning (to taste)
  12. Prepare 1/2 C water or chicken stock/pork stock
  13. Make ready 2 tsp sugar
  14. Prepare Note:
  15. Take 1 . Some people use animal fat like lard or beef dripping to cook this noodle
  16. Take 2 . Marinara mix can be used in placed of fish balls/fish cakes

Hokkien char mee (Hokkien fried noodles; 福建炒麵) is served in Kuala Lumpur and the surrounding region. It is a dish of thick yellow noodles braised in thick dark soy sauce with pork, squid, fish cake and cabbage as the main ingredients and cubes of pork fat fried until crispy (sometimes pork liver is included). Heat the vegetable oil in a wok over high heat. Add the shrimp paste and stir-fry until just dissolved.

Instructions to make Hokkien Noodles:
  1. There are variations of hokkien noodle. Choose the thick one. Soak noodles in boiling water to soften. Drain and set aside. Since i don’t take pork or lard, i use other type of animal fat. Below is a picture of animal fat i use at home.
  2. Heat wok. Pour in oil (or lard if using). Add garlic then meat slices, cook for 2 to 3 mins.
  3. In separate bowl, mix all the sauces- cooking caramel (if using), dark soy sauce, sesame oil, ground pepper. Pour this mixture into the wok. Add water, sugar and chicken cube (if needed). Stir. Then add noodle and cut green vegies of your choice. Next Add corn starch mixture. Let it simmer again till gravy thickens. Adjust taste to your liking. If using lard, add another spoon of lard to the noodle at this stage. Stir and remove from the heat.
  4. Serve hot.

Heat the vegetable oil in a wok over high heat. Add the shrimp paste and stir-fry until just dissolved. Then add the marinated pork and stir-fry for another minute. Prepare the Fantastic Hokkien Noodles, according to package instructions, drain, rise well with cold water and then set aside. In the meantime, combine all of the sauce ingredients into a small bowl and whisk well.
