The more the vegetables caramelize at this stage, the more intensely flavored the soup will be. Once the oil is shimmering, add the chopped onion, carrot, celery, seasonal vegetables and ½ teaspoon of the salt.

- Now serve the stock hot with chicken pieces and all vegetables in separate bowls. Or you can mix all the ingredients in a stocks and then serve it hot.
