- Place carcass and bones in large pot, add water just to cover. Add chicken cubes. Boil gently 2 hrs., until falling apart. Remove all solids and set aside to cool.
- To broth add all vegs. and spices.
- Boil gently until carrots are al dente. Add noodles. Cover and boil gently until noodles are al dente.
- Meanwhile, pick all usable meat from cooled bones.
- Add meat to pot and turn off heat. Uncover. Adjust seasonings.
This uses up a lot of them quick and easily. We didn't use our slow cooker but you could if you'd prefer to make this over night. Just cut the carcass up a bit more and set on a low heat overnight. Break up the turkey carcass and add all the chicken pieces to a large soup pot with the onion and garlic. Tie the fresh herbs with a string and add to the pot.
