Congee is essentially a rice porridge made by boiling rice in a great deal of water until it breaks down into a pudding-like consistency.

- Heat the oil in a small saucepan under medium heat until hot but not smoking. Sauté the garlic for one minute. You can skip this step for a lighter flavoured porridge.
- Add the rice and just enough water to cover it. Bring to a boil, stirring occasionally.
- Add dashi powder/chicken broth cube, stir until it dissolves. Stir in soy sauce. Reduce heat to low and let simmer for a couple of minutes.
- Optionally, add an egg, stir it into the porridge and let it poach. Serve hot.

We usually serve Okayu to people who are recovering from sickness, the elderly, or babies. And one egg per two cups of cooked rice. I used four cups of cooked white rice for this batch, hence, two beautiful eggs.
