Instructions to make Simple rice porridge:
  1. Heat the oil in a small saucepan under medium heat until hot but not smoking. Sauté the garlic for one minute. You can skip this step for a lighter flavoured porridge.
  2. Add the rice and just enough water to cover it. Bring to a boil, stirring occasionally.
  3. Add dashi powder/chicken broth cube, stir until it dissolves. Stir in soy sauce. Reduce heat to low and let simmer for a couple of minutes.
  4. Optionally, add an egg, stir it into the porridge and let it poach. Serve hot.

The rice is simmered in a pot with water until the mixture disintegrates. As the rice is tender soft and easily digestible, it is known as a healing food in Japan. We usually serve Okayu to people who are recovering from sickness, the elderly, or babies. And one egg per two cups of cooked rice. I used four cups of cooked white rice for this batch, hence, two beautiful eggs.
